State of the Garden Address: What's for dinner?

This is what my garden looks like currently. With the exception of the purple sprouting broccoli (PSB) in the back left side of this photo, there's not much going on at the moment. If you squint, you might be able to see that there's also collards, kale, mustard, lettuce, broccoli, Chinese broccoli, broccoli raab, turnips, beets, carrots, radishes, cilantro, parsley, dill, and arugula. No really. I told you to squint!

 

 

Spring planting is like hitting the reset button on the garden. There's a bit of a lull while waiting for it to "boot up" again, for the new crops to come in. In a month, these beds will be lush and green. But what about dinner tonight?

 

Last week, we had a big thunderstorm and it rained all day. The following morning, I woke up to find these beauties:

 

Wine cap mushrooms! I had inoculated the mulch in the paths between the garden beds with wine cap mushroom spawn the previous spring. And then I didn't see any mushrooms, so I was convinced it didn't work. I'm ever so happy to have been wrong!

 

 

As I have previously discussed my broccoli love, I also love mushrooms. PSB + mushrooms = love fest! On Saturday, I made PSB and mushrooms tossed with pasta and took it for a picnic. Last night, I made PSB and mushroom risotto and it was fabulous.

 

Looking back at the top photo of this post, there is a lot of other green stuff growing in the paths between the garden beds. Some of that is cilantro, which I allow to go to seed and freely grow wherever it chooses...and whenever there gets to be too much cilantro, I eat it. The rest of the green stuff is dandelion, which is especially delicious in the spring too.
